{opa chicken!}

We had an awesome dinner tonight, if I do say so myself!  Before getting married, I didn't cook..at all.  I was scared to death that I wouldn't know what to do and we would end up eating frozen pizza every night...(yet to do that!)  So, in my quest to become a fancy-dancy cook like my mom and grandma, Pinterest has proven why it truly is and always will be my best friend...sorry Travis.
The particular recipe that you will see below was given to me by my mom and also found here.  It is so very good and so very easy.  I also served steamed asparagus and Uncle Ben's Wild Rice with it.  Needless to say, both Travis and I won the clean plate award and I have a feeling that you will too...

"Opa Chicken"...make sure to say "Opa" a lot when you a preparing and then of course eating..
(Ingredients & Directions below)




What you'll need:

  • boneless skinless chicken breasts
  • 5 ounce container 0% plain Greek yogurt
  • 1/2 
    cup freshly grated Parmesan cheese
  • teaspoon seasoning salt
  • teaspoon garlic powder
  • 1/2 
    teaspoon ground black pepper

Cooking directions:
  • Preheat oven to 375 degrees. Spray baking dish with non-stick cooking spray.
  • Combine yogurt, Parmesan cheese, and seasonings.
  • Spread over chicken breasts. Bake for 45 minutes, or until chicken is cooked through and topping is browned. Serve immediately.
